一直非常喜欢吃手撕猪肉,还记得那时候只要在英国的街边集市看到手撕猪肉三明治就忍不住要吃一个。在伦敦,爱丁堡,利兹,哪里的都吃过。我甚至还想过如果在英国办婚礼要不要来一头烤猪给来宾,后来想想可能太豪放了就作罢了 (毕竟那场3年前被取消的婚礼定在了全欧洲排名前几大的公园里面的庄园里,吃烤猪未免有点画风跑偏lol)。

感觉西餐里有一些固定的肉类和水果或香料的搭配非常巧妙,比如鸡肉和柠檬,鸭肉和莓果或橙子,火鸡和蔓越莓,猪肉和苹果,羊肉和薄荷等。虽然听起来非常黑暗,但是我是一个吃鸡肉可以配下半罐蔓越莓果酱的人。所以今天的慢烤猪肉三明治,我也搭配了自制的肉桂苹果酱,真的吃到停不下来。

用料  

慢烤猪肉
红椒粉Hot smoked paprika 3餐匙 tbsp
红糖 Brown sugar 2餐匙 tbsp
大蒜,去皮拍碎Garlic cloves, peeled and crushed 4
百里香Thyme sprigs 4
橄榄油 Olive oil
猪前肩肉Pork butt (front middle shoulder) 2-3kg
洋葱,去皮切块 Onions, peeled and quartered 4
盐和胡椒 Salt and Pepper
乔巴面包 White baps
苹果酱
大苹果 Apple 2
肉桂粉 Ground cinnamon
白糖 (选用) Sugar (optional)

慢烤手撕猪肉 Slow-Cooked Pulled Pork的做法  

  1. 将红椒粉,糖,蒜瓣和百里香混合后加入盐和胡椒调味。加入少许橄榄油将调味料做成酱状。将调配好的酱料涂抹在猪肉表面后,可直接制作或腌制不超过24小时。Mix the paprika, sugar, garlic and thyme in a bowl. Season with salt and pepper, then add a little olive oil to create a paste. Rub the mixture all over the pork, massaging it into the meat. It can be cooked immediately, or leave to chill for up to 24 hours before cooking.

  2. 将切好的洋葱放入烤盘后加入一些百里香,然后将腌好的猪肉肥肉面朝上放入烤盘。烤箱预热至140摄氏度后将烤盘放入烤箱烤1小时,随后盖锡纸再烤4至5小时至猪肉酥烂。Put the onions into a roasting tin, sprinkle with thyme and place the pork, fattiest side up, on top. Preheat the oven to 140 C, roast the pork for 1 hour, then cover with foil and cook for a further 4 to 5 hours until the meat is really tender.

  3. 将烤好的猪肉盖锡纸静置1小时后用叉子撕散。Once the pork is cooked, cover it loosely with foil and set aside to rest for up to 1 hour before pulling the meat.

  4. 苹果去皮切小块后加入锅中中火炒至出水,加入肉桂粉和白糖(如需要)。Peel and dice the apples, heat the pan over a medium heat then add the apples, cook until soft. Add in the cinnamon and sugar (if using).

  5. 用料理机将炒好的苹果打成泥,倒回锅中继续炒至水分发。Put the cooked apples in a food processor to make a sauce, and then cook until the moisture evaporated.

  6. 组装做三明治。
