Zrou, roasted | 3 cup |

chopped coriander leaves | 1 handful |
roasted chickpeas flour | 4 tablespoon |
coriander powder | ½ teaspoon |
red chilli powder | ½ teaspoon |
cumin powder | ½ teaspoon |
turmeric powder | ½ teaspoon |

vegetable oil for deep-frying | abundant |
For preparing the Gravy | |
Whole spices mixture | |
cloves | 2-3 |
black peppercorns | 3-4 |
black cardamom | 1 |
green cardamom | 1 |
small cinnamon stick | 1 |
bay leaves | 2 |
teaspoon of cumin seeds | 1 |
star anise | 1 |
green chili, chopped | 8g |
garlic cloves, minced | 12g |
ginger, chopped | 50g |
white onions, chopped | 260g |
Powder spices mixture | |
paprika powder | 1 teaspoon |
turmeric powder | ½ teaspoon |
coriander powder | 1 teaspoon |
red chili powder | 1 tablespoon |
roasted coconut and roasted chickpeas meals (50%/50%) | 1 tablespoon |
anchor powder | ½ teaspoon |
salt | as needed |
Zrou Kofta Curry的做法
#Kofta
Preheat the deep fat fryer to 160°C
Mix half of the roasted Zrou with the boiled potato, ginger, chilli, cumin seeds, garlic and
coriander leaves
Work it in a bowl until getting a thick paste#Kofta
Take rest of Zrou in another big mixing bowl and add the paste above together with the chickpeas flour, coriander powder, chilli powder, turmeric powder
Season with salt and mix all together
If the dough feels sticky. Gradually add some more chickpea flour
Increase the heat of the oil to 180°C
Now form small size balls, called Kofta, and carefully deep fry them in the hot oil#Gravy
Heat up a pan with oil to medium fire
Add in the whole spices one by one, stir well until fragrant
Now mix in the minced garlic, ginger and green chili and sauté for few minutes
Add in the chopped onions fry them till golden brown, then set aside
Let this mix cool and then blend it in a food processor to make a paste#Gravy
Add some water to help on the consistency
In another pan add some oil and gently toast the paprika
Add in the onion paste, keep on frying for 2 minutes
Add the powder spices, coconut and chickpea roasted meals
Roast well and add 2 cups water, bring it to boiling pointOnce boiling quickly heat up the Kofta in the gravy, season with salt and anchor powder
Garnish with chopped coriander leaves on top
