zucchini  dumpling的做法步骤图

dough
- 300g flour w/ 150g water + 2.5g yeast

filling 1. zucchini egg

用料  

zucchini, small 3
egg, medium 5
spices
white pepper important, plenty
salt some
ginger, minced moderate
oyster sauce some
sesame oil some
peanut oil

zucchini dumpling的做法  

  1. --- dough ----
    add yeast water into flour, stir while adding water to small clusters till no dry flour left.

    knead into a hard dough

    rest while making the filling

  2. prep:
    1. julienne zucchini, add small pinch of salt for 5 mins

    2. gently squeeze water out (don't squeeze too hard, want to maintain some texture)

    3. cut zucchini into ~2cm smaller strips

    4. pour some sesame oil on top to seal the moisture inside

  3. prep 2:
    saute eggs on medium heat; stir w/ chopsticks while sauting so it will be small crumbles

  4. mix filling
    - add egg crumbles into zucchini small strips;

    - add white pepper, minced ginger, oyster sauce, more sesame oil and peanut oil

    - some salt to taste

  5. assemble!

  6. --- cook ----
    add small amount of oil in the pan while heat is on

    no need to wait till the oil is too hot, add in dumplings

    pour in water till the dumplings are almost covered

    put on the lid with a crack opening

    cook till all water evaporates
